Contributed to recipes, overall food quality, and consistency by following recipes for catered events, pop-up dinners, tasting menus, and recreation of dishes set forth by the Culinary/Creative Director.
Chef de Cuisine Job Duties:
Leads kitchen team in all aspects, reports directly to Culinary/Creative Director Provides guidance to junior kitchen staff members, including, but not limited, to shopping lists, mise en place preparation, hot food execution, and dish plating Oversees and organizes kitchen stock and ingredients Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance Keeps cooking stations clean and well organized while prepping for events Hires and trains new kitchen employees to catering company and kitchen standards Manages food and product ordering by keeping detailed records and minimises waste, plus works with existing systems to improve waste reduction and manage budgetary concerns Supervises all food preparation and presentation to ensure quality and standards Works to maintain kitchen organization, staff ability, and training Verifies that food storage units meet all standards and are consistently managed Assists Culinary/Creative Director with menu creation as requested Coordinates with management team on supply ordering, budget, kitchen efficiency and staffing.
